By blending rinsed black beans with eggs, coconut oil, unsweetened cocoa powder, protein powder, and a touch of maple syrup or honey, you get a smooth batter packed with nutrition. Ingredients
  

  • 1 cup black beans rinsed and drained
  • 2 eggs
  • 1/4 cup coconut oil
  • 1/3 cup unsweetened cocoa powder
  • 1 scoop chocolate or vanilla protein powder
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 2 tbsp maple syrup or honey to taste

Method
 

  1. Preheat oven to 350°F.
  2. Blend all ingredients until completely smooth.
  3. Pour into a small lined pan or mini muffin tin.
  4. Bake 15–22 minutes, depending on size, until just set.
  5. Cool before slicing or removing from pan.
  6. No artificial sweetener needed; sweetness can be adjusted with honey or maple syrup.
