Ingredients
  

  • 2 cups chopped cucumber
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/3 cup sliced pepperoni or turkey pepperoni
  • 1/3 cup olives
  • 1/3 cup chickpeas optional
  • 1/4 cup feta
  • 1 Tbsp extra-virgin olive oil
  • 1 Tbsp red wine vinegar or lemon juice
  • 1 tsp oregano
  • 1/2 tsp garlic powder
  • Black pepper to taste

Method
 

  1. Combine cucumber, tomatoes, onion, pepperoni, olives, chickpeas and feta.
  2. Whisk olive oil, vinegar or lemon, oregano, garlic powder and pepper.
  3. Toss dressing with salad and chill briefly before serving.
  4. Add grilled chicken or white beans to increase protein and fiber.
