Blended chickpeas disappear completely into a creamy base of natural peanut butter, vanilla protein powder, honey, and vanilla extract, while old-fashioned oats, ground flaxseed, and mini dark chocolate chips add texture, ALA omega-3 fats, and a touch of sweetness. Ingredients
  

  • 1 cup canned chickpeas drained and rinsed
  • ½ cup natural peanut butter
  • 1 scoop 30 g vanilla protein powder
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • ¼ cup old-fashioned oats
  • 2 Tbsp ground flaxseed
  • ¼ cup mini dark chocolate chips
  • ¼ tsp salt

Method
 

  1. Blend: Add chickpeas, peanut butter, protein powder, honey, vanilla, and salt to a food processor. Blend until completely smooth.
  2. Add fiber: Add oats and ground flaxseed and pulse just until combined.
  3. Add chocolate: Fold in mini dark chocolate chips by hand.
  4. Chill: Refrigerate dough for about 20 minutes.
  5. Roll: Form into 12 tablespoon-sized bites.
  6. Store: Keep refrigerated in an airtight container for up to 1 week.
