  • 6 eggs
  • 1/2 cup egg whites
  • 1/2 cup cottage cheese
  • 1/2 cup spinach
  • 1/4 cup bell peppers diced
  • 1/4 cup onion diced
  • 1/3 cup shredded cheese
  • 1 pinch garlic powder
  • 1 pinch salt and pepper

Method
 

  1. Preheat oven to 350°F.
  2. Blend eggs, egg whites and cottage cheese.
  3. Stir in vegetables, cheese and seasonings.
  4. Pour into muffin tin.
  5. Bake 20–25 minutes until set.
  6. Make ahead and refrigerate up to 5 days.
